One of our specialities is the home-made "Flammkuchen" after an original recipe from alsace bakes in the earthenware oven.
The origin of the "Flammkuchen" also names "Flommkueche", is the Alsace and Ortenau in the Black Forrest. It is a traditional meal. After the oven got fired up it had to be proved if the temperature is ready to bake bread. For that a piece of dough has benn taken. Then cream, bacon and onions have been spread on it. As a result occured the crispy "Flammkuchen" which was not only a delicacy for young and old.
We serve the cripsy "Flammkuchen" covered with cream, onions and bacon or additional with cheese, garlic and vegetables. Another variation is the sweet "Flammkuchen" with apples soaked in Calvados liqueur. A glas of wine completes the meal.
